Dialog Secretum is a very special white wine. A Viognier that has been produced in a similar manner to a red wine; the juice and grape skins were not separated after crushing but allowed to stay in contact. This unusual method allowed the skin's tannins and colour pigments to influence the wine. Also known as an 'orange wine', our Secretum opens a third choice for food-and-wine pairings. Its delicate white wine flavours, combined with a touch of natural tannins, is ideal for all dishes where you cannot decide “white or red?”. Enjoy!
Grapes hand picked in 12 KG boxes. The grapes are cooled down to a temperature of 5ºC and then completely de-stemed. Maceration and fermentation in stainless steel vats with controlled temperature of 12-14ºC. Ripening during 4 months in french oak barrels of which 1 month including the grape skins. Subsequent cold stabilisation.
