Hand picked 12KG boxes. The grapes are cooled down to a temperature of 5 degrees centrigrade and then completely de-stemed. Subsequent maceration and alcoholic fermentation in temperature controlled stainless steel vats with controlled temperature of 22-24 degrees centigrade.
